Pyaz Paratha (Indian Flat Bread with Onion)

Winter means roaming around, outing, meeting friends and food. It is the season when you feel like eating different types of foods. Today I’ll be sharing one ‘Paratha’ recipe that is a complete meal and you do not need any sides to have it. Just a little pickle serves all. It is made of ‘Makai Atta’ or corn meal and whole wheat with lots of onion, tomato and coriander. It is very easy to make and trust me absolute yumm! I served it with ‘Matar Aloo ki Sabzi’ along with Mango Pickle but you can have it with only pickle too.

Ingredients:

  • Makai Atta or Corn Meal – 2 cups
  • Wheat Flour – 1 cup
  • Ajwain or Carom Seeds – ½ tsp
  • Onion – 1 (Big – Finely chopped)
  • Tomato – 1 (Finely Chopped)
  • Coriander Leaf – A handful (Finely chopped)
  • Green Chilli – 2 or as per taste (Finely chopped)
  • Salt – To taste
  • Chaat Masala – ½ tsp
  • Oil – 2 tsp + for roasting the parathas

Steps:

  1. Discard the soft pulpy core of the tomato. And chop them.
  2. Mix chopped onion, tomato, green chilli, coriander in a separate bowl.
  3. Take a big bowl and mix two types of flours. Add a little salt, ajwain and 2 tsp of oil. Mix very well.
  4. Mix in half of the chopped vegetables mix in the flour and mix well.
  5. Now knead a soft dough adding little water at a time as required. Rest for 10 minutes.
  6. Pinch some dough (size of a regular Paratha) and roll between your palms.
  7. Now roll into a small disk.
  8. Add chaat masala to the rest of the mixture.
  9. Sprinkle some onion-tomato mix on the rolled dough and roll again into a disk like a roti/ chappati.
  10. Heat a tave and roast the Paratha from both sides.
  11. Now add a little oil on both sides and roast the Paratha till light brown and crisp.
  12. Serve hot with any pickle and salad.
