Recipe of Dhaba-style Dum Aloo

 

Ingredients:

 

For Marination:

  • Mustard oil: ¼ cup
  • Red chilli powder: 1 tbsp
  • Turmeric: 1 tbsp
  • Salt: ½ tbsp
  • Garam masala: 1 tsp
  • Coriander powder: ½ tbsp
  • Cumin powder: ½ tbsp
  • Besan (roasted gram flour): 2 tbsp
  • Kasuri methi (dried fenugreek leaves): 1 pinch
  • Thick curd: ½ cup

For Gravy:

  • Mustard oil
  • Cinnamon: 1 pc
  • Black cardamom: 2 pcs
  • Green cardamom: 5 pcs
  • Black pepper: 10 pcs
  • Bay leaves: 2 pcs
  • Cloves: 5 pcs
  • Chopped onions: 1 cup
  • Boiled & peeled potatoes: 6-7 pcs
  • Chopped green chilli: 1 tbsp
  • Ginger & garlic paste: 2 tbsp
  • Turmeric powder: 1 tbsp
  • Red chilli powder: 1 tbsp
  • Coriander powder: 1 tbsp
  • Cumin powder: ½ tbsp
  • Garam masala: 1 tbsp
  • Curd: ½ cup
  • Tomato puree: 1 cup
  • Salt: 1 tbsp
  • Water as required
  • Kasuri methi: 1 pinch
  • Chopped coriander: 1 tbsp

 

 

Method:

 

  1. Marination:

    • Heat a pan over medium heat and add mustard oil. Heat until it reaches a lukewarm temperature.
    • Transfer a portion of lukewarm oil to a bowl for marination.
    • Add red chilli powder, turmeric powder, salt, garam masala powder, coriander powder, cumin powder, besan, kasuri methi, and curd to the bowl. Mix well to form a smooth paste.
  2. Preparing Potatoes:

    • Poke boiled and peeled potatoes with a fork or knife to create small holes.
    • Add the potatoes to the bowl with the marination paste and toss gently to coat them evenly.
    • Roast the marinated potatoes directly over a gas flame until evenly charred. Set aside.
  3. Making the Gravy:

    • Heat mustard oil in a separate pan over medium heat.
    • Add cinnamon, black cardamom, green cardamom, black pepper, bay leaves, and cloves to the pan. Let them crackle.
    • Add chopped onions and sauté until golden brown.
    • Add chopped green chillies and ginger-garlic paste. Sauté until the raw smell disappears.
    • Add turmeric powder, red chilli powder, coriander powder, and cumin powder to the pan. Cook for a minute.
    • Stir in curd and cook for a minute.
    • Add tomato puree to the pan and cook until the gravy releases oil.
    • Adjust the consistency with water and cook for 2-3 minutes.
  4. Assembling:

    • Add the roasted tandoori potatoes to the gravy and gently mix them.
    • Cook for a few minutes to allow the potatoes to absorb the flavors of the gravy.
    • Sprinkle garam masala, kasuri methi, and chopped coriander over the dish.
    • Cook for another 2-3 minutes.
  5. Serve: Dhaba-style Dum Aloo is ready to be served. Enjoy with rice or naan.
