Ingredients
- 2 tbsp.
cornstarch
- 1 tbsp.
Cajun seasoning (salt free, if possible)
- 1/4 tsp.
kosher salt, plus more to taste
- 1 lb.
okra, halved lengthwise
- 2 tbsp.
extra-virgin olive oil
- 1/2 c.
sour cream
- 2 tsp.
creole mustard or country-style mustard
- 1/2 tsp.
hot sauce
Lemon wedges, for serving
Directions
- Step 1In a large bowl, combine cornstarch, Cajun seasoning, and 1/4 teaspoon salt. Add okra and toss to coat. Drizzle with oil and toss again to coat.
- Step 2Working in batches, in an air-fryer basket, arrange okra in a single layer (do not overcrowd). Cook at 400°, tossing halfway through, until golden and crisp, about 18 minutes. Transfer okra to a plate; season with salt.
- Step 3Meanwhile, in a small bowl, combine sour cream, mustard, and hot sauce; season to taste with salt, if desired.
- Step 4Squeeze a lemon wedge over cooked okra. Serve with more lemon wedges and mustard sauce alongside.
