Ingredients

Step 1

Make sugar syrup -  Combine sugar and water into a wide pan. Bring it to a boil and add lemon juice. Add saffron strands and cardamom powder to the syrup. Allow the syrup to simmer until it reaches one-string consistency.

Make the batter - Combine besan, food color, and ghee in a bowl. Add water and make a lump-free thick batter. Slowly and gradually add water to make a smooth, lump-free, and pourable batter.

Fry boondi - Once the ghee is hot, pour the batter through jhara. Shake it vigorously over the oil so that the batter drops through those holes as tiny droplets. Fry them for a minute, then remove them immediately.

Step 4

Add to sugar syrup - Add the fried motichoor boondis to the sugar syrup. Cook the boondi at the lowest setting. Take the pan off the heat and add slivered pistachios and melon seeds.

Step 5

Shape Ladoo - When comfortable enough to touch, take a golf-sized mix into your palms and roll them into spherical-shaped ladoos. Repeat the same with the remaining mix and shape all the ladoos.
